Let me clarify my statement, store and forward will work by default in a
peering setup, in other words a peer will store and forward for its other
peers. You will need an MX record for each peer that you want to act as a
backup.

for example if you have 3 peers
mail1.domain.com
mail2.domain.com
mail3.domain.com

You point the primary MX record point to mail1.domain.com
the secondary MX to mail2.domain.com
and if you want add a tertiary MX record pointing at mail3.domain.com

if mail1 goes down then mail will be delivered to mail2 which will queue the
mail until mail1 becomes available or the max queue time expires.

So the original posters statement of " the domain name for which IMail is
acting as a gateway must not exist as a domain within IMail" only applies in
a gateway situation or when it is specified as the secondary MX and does not
apply to peering
