For the few dollars extra for a hardware mirror, we opt to go that route. We've had drives die and you just swap the drive and re-boot, using the controller sofware to re-build the new drive.
I also agree with the boot disk. W2K automates it in the backup utility, so there is no excuse not to have an up to date disk or two on hand. We just leave the first one in the floppy drive. Finally, for the price of IDE drives these days, we tend to ghost and upgrade them every few years to hopefully get rid of a tired one before failure.
