I am using RICH TEXT - I guess I have to move to simple text.  I am not
using HTML.

You can thank our friends at Microsoft for that.  Apparently, they are
taking the subject that you type in, and embedding it in the HTML code.
Although that can be wonderful sometimes (at least I assume so -- I don't
actually use HTML E-mail), there are a few cases like this where it poses a
security problem.
