On gateway servers, what do most people set there Maximum SMTP Processes to?
Or do you just leave them default?  I am not suggesting this as a fix or
solution just curious?

The default setting is 30, and is the recommended setting. Microsoft has an undocumented resource that can get depleted (often causing the server to crash, due to poor handling of the situation in Windows), and since it is undocumented, you can only hope that it won't happen to you. With the default setting of 30, you should be fine in most cases. However, raising it to a higher value works fine on some servers but not on others. If you want to raise it, you should read http://www.declude.com/dq.htm first, to get a general understanding of the situation.
