Although I do not use Goldmine myself, I have 2 clients that are familiar with it, and both have stated that the e-mail functions tend to be problematic when doing more than basic messages.

I use GoldMine heavily by virtue of working for a GM solutions partner, and I can tell you that I could fill a book with all the problems seen when sending emails from GoldMine. There is no rhyme or reason to most of it, but I do know GoldMine will not properly forward HTML/RIch Text emails, and in some cases attachments. I have found issues with the order in which items are placed in the email header by GoldMine, which could throw off some clients.
The client sits on top of IE (somewhat loosely in my opinion), so in some respects it follows the IE settings. But, it is neither consistent or logical in the ways it sometimes does this. I do know that it works better with IE6, and in the case of GM 6.0 and above, IE6 is required.
I really wish I could help you out with your specific problem, but figuring these out is sometimes near impossible. In addition, my experience shows that you can submit the issues to FrontRange and until they get a bunch of people complaining or until they can consistently duplicate it, it is a non-issue.
