Does Imail perform DNSBL checks on just the last SMTP server in the chain, or does it check all SMTP servers involved in the delivery of the message?

It just checks the IP address that connects to the IMail server (as is the case with most anti-spam programs). For multi-hop support, you need a fully featured anti-spam program (like our Declude JunkMail, which is believed to have been the first anti-spam program with multi-hop support).
