Take a look at Popfile (http://popfile.sourceforge.net/). It provides a POP3 proxy that will classify into as many buckets as you define. It uses a web browser interface for training. Outlook Express isn't the best client to use in this instance because its rules don't have access to the email headers which is the cleanest way for Popfile to add classification information, but for OE's benefit, Popfile can modify the subject line. I haven't used it myself, but Firebird (Mozilla) has bayesian filtering built in. You can check to see if it allows for multiple buckets.
