I want to be able to use our IMAIL server to act as a gateway for mail bound for an exchange server, while continuing processing mail with Imail for other domains.
That will work fine. We have many customers doing exactly that.
If I wanted to use the same spam settings, I think I need to just add an MX record to the domain in question to point to the IMAIL box. The IMAIL box would have an entry in Hosts file to point to Exchange Box... Does that sound like all I need?
