Main reason for migration is the lack of knowledge and the cost of running.
They only have a license for 2000 and they have no spam or virus protection
currently on the exchange system. The have multiple domains that they want
to move from the current ISP's mail server and host on their own.

The calendar is really not a key issue but I know if it disappears that
people will complain.
The only thing I can think to do is have an external mail server collect the
mail and then have the exchange server collect it.

Out of curiosity, why do you want to migrate away from Exchange Server?
Besides being an ISP, we also do small to mid-sized LAN's & WAN's and we
have deployed quite a few Exchange Servers without any problems.  We use
Exchange in-house, great product.  Don't get me wrong, IMail is awesome
for our ISP side; we were running QMail on RedHat and like IMail MUCH
more.

In answer to your question, no.  Everyone knows how Microsoft is...it's
basically locked down so that Outlook only works really well with
Exchange.
