A client is saying that she is not getting all mail from "domain.co.nz"

That actually should be unrelated:

Going thru the sys log I found this

07:22 15:57 SMTP-(3b4500000a5c8c6b) Info - DNS Cache full, deleting last item (domain.co.nz)

This means that IMail tried adding a DNS entry into its cache, but its cache was full, and it deleted the last item in there (domain.co.nz). That just means that next time IMail has to look up that domain, it has to use DNS, rather than its cache (which would be slightly faster).

07:22 15:57 SMTP-(3b4500000a5c8c6b) processing C:\IMail\spool\Q3b4500000a5c8c6b.NTF
...
Those are just SMTP entries, which show IMail trying to deliver E-mail.

The problem with not receiving E-mail would involve SMTPD entries. Your client will need to give you more information -- any bounce messages or other indication of a problem, and/or identifying info (such as to/from/time, so you can look it up in the log file).
