Most firewalls and routers can be configured to route incoming data on one port to any specific port on a specific computer.  If you don't have a hardware firewall or router than why not?  :o)
 
If hardware is out of the question, or the problem is all internal, then you can use a port forwarding program or service on your mailserver.  I have used the free 602LanSuite 2004 successfully in this manner although it is a bit of overkill for just a single port forwarding need.  It will allow all access to port 587 to hit port 25 instead.
