I'm running Imail Server 8.1 Pro with the latest and greatest patches. I have a list that is configured to accept postings only from the Moderator, yet over the past couple of months I've had viruses spoof my return address and send to the entire list.

This particular list is for a security user group, so this makes us look seriously bad and opens a HUGE hole in my eyes for the Imail product.

How is it a hole? You've set up the list so that any E-mail with a return address that matches the moderator's E-mail address should go to the list. I can understand not wanting the viruses to get to the list, but that's a drawback with the method you are using.

Is there a way to further restrict a list?

Yes, if you check the mailing list settings, you can have it set to require a password.
