Am I correct in saying that if you have numerous virtual domains that MX to your server, then you are only responsible for spf entries for the domains that you handle DNS for?

Sure, how you can put TXT records into a zone that isn't on your DNS?

Only the domain owner (or you as his proxy) can modify his zone file.
