Some (not all) mail that we receive appears to be "sent" from the senders
local computer, and not the mail server itself.

That is normal, and by design. All mailservers will add a Received: header recording the IP that they received the E-mail from (regardless of whether they receive it from a mail client or a mailserver). Removing or altering that header would be a Bad Thing.
