F-Prot is one of the fastest for mail server processing. Signatures are updated roughly as frequently as most other providers. Frisk has an alert service to notify you when signatures are updated, but most of us update them automatically via a scheduled process.
It's usually best to run multiple scanners (either multiple at the mail scanner, or one at the mail scanner and another at the desktop) to avoid a dependency on the update frequency/detection by a single vendor, but F-Prot is definitely a good one to use.
