Then you don't want to delete the domain.  Dan's original suggestion to setup 
an alias on Exchange to which all IMail users will
forward (by creating forwards for each user setup in IMail) would probably work 
best.  If needed, add a HOSTS file entry on the
IMail server in the following format:

1.2.3.4  exchange.domain.com

Yes, I can see how this question is confusing. Let me try to explain this 
better. It would be GREAT if I could take ALL stored mail
and auto-magically send it to the proper Exchange user. My bigger problem is 
keeping the Imail server alive and any mail that is
"accidentally" sent to it is forwarded on to Exchange. I need to keep the box 
alive for a variety of reasons, mostly because of the
listserv capabilities, but also for any mailboxes that I missed. My Exchange 
server then becomes the final destination for all mail
to my domain. I'm not sure if this was worded any better. Thanks.

  Maybe I'm missing your point and maybe I'm missing the point of the people 
that have replied to you so far.  Your asking how to
get all e-mail off your IMail box (currently stored via POP or IMAP) and onto 
Exchange correct?  We are also looking at moving away
from IMail to Exchange and have the same issue (mail stored on IMail using IMAP 
needs to be migrated over to Exchange).
 
To the people that have posted the store forward config solution:  Will this 
also forward the e-mail that is already on the Imail
box or just new e-mail that is received after it (store forward) has been setup?

Greetings, 
        I regret that I will be shortly moving away from Imail. I've got no 
problems with the product, but our new IT director loves
Exchange, so that will be the way we are going. I'd like to take this 
opportunity to thank the MANY MANY contributors of this list
for the excellent help, tips, insight that they've shared, both on and off 
list, with me. There is a wealth of knowledge here that I
will sorely miss. 

        I do have one last question that needs to be answered and, hopefully, 
someone knows a graceful way to do this. On our move
to Exchange, we will still have the Imail box running for awhile, but we want 
ALL mail immediately forwarded (no storage) to the new
Exchange server. Could someone, please, walk me through the procedure. 
especially if they have tested this. I appreciate all the
help you can give. Thanks again, everyone.
