1) Stop all Imail Services 2) Make a backup of your System - or even from the registry and the Imail folder - so you will be able to reinstall imail 6 by reinstalling imail and restore all imail folders and the registry) 3) Just upgrade (I upgraded from V4 to V7 without problems), let setup convert the mailboxes if necessary 4) reboot & check all settings. 5) done.
Your mailservice will be unavailable for only some mnutes (during the copy & setup) and the reboot. No mails will got lost, because the other servers will try to resend your mail (normaly for 2 Days...) It worked for me without any troubble! But no guarante. Better make a full backup of the server first to go back if you encounter problems. (but I think it will just run fine and you won't need your backup - but with a full copy of everything, you are on the secure side...)
