Tobin-- No, unfortunately there is no way currently to edit person attributes via an HTML form. The recently-added patient tag allows you to edit basic patient demographic information, but this doesn't allow the editing of specific person attributes.
Feel free to add a ticket to this for the HTML Form Entry project if this is a feature you'd like to see in the future.
