You found the right part of the manual! Welcome to Gnus - it can do everything, but being able to do so makes it quite complicated. Luckily you can easily test if your setup is about to do what you want - pressing 'B q' on an email will tell you where the split rules would move that email, if you asked Gnus to do so.
