I don't object to doing things by hand -- in fact I tend to learn better
when doing things manually, and can then understand what is going on. So,
at this stage, I'm not looking to find a tool which solves things magically
(primarily because I don't know if I have things configured properly yet)

I have verified that the reason that I am not getting any mail log is
because the sieve script is not being fired. It appears that I have missed
a crucial step somewhere, because I am getting a syslog message
"WARNING: Sieve script doesn't exist:
fname=<{SIEVEDIR}/domain/b/beta.{SUBDOMAIN}/u/user/defaultbc> syserror=<No
such file or directory> func=<sieve_script_load> 1"

It appears that I used the incorrect upload command. The following command
*appears* to work as expected:
sieveshell -s <user>@<domain> --realm=<domain> --pass=<password> server

Setting smtp_backend as either host or sendmail works. However, despite
creating the directory
 <configdirectory>/log/smtpclient.smtp_backend, I am not getting any
logging info on the SMTP conversation.

Still haven't sussed out how to use gyrus though.
