You need to set the machine up so it has at least two full domains on it 
and preferably a dns server so that they can be looked up properly. On my 
notebook for demo work I installed NTBind so that I could be self contained 
segment of the 'net.

The idea is that the POST server actually sends the mail, even if it never 
leaves the network card :-), and the SMTP server collects it, just as a 
normal server combination would work.
