My assumption (which of course can be bad) is that your Windows app
(presumably Outlook) is probably using non-standard characters (as it often
does) that the Mac email reader does not display the same as your Windows
app.  Particularly if this is some sort of symbol (what character is
supposed to be in the place of "�" -- it looks like it may be an em-dash)

iMS does not do anything with mail encoding - this is handled by the
cfx_imsmail tag.  I can't really discern the
problem from the information that you sent here.  Could you please send me
details about the email in question?  You can
send it off-list to me directly.  Also, please let me know what email client
the Mac user is using.
