But I can't use that to modify existing headers, correct?  My problem is that you said bouncebacks should be handled using the from address..

You can use the cfx tag to add headers like:
<cfx_imsmail ...
token_addheader_X_List="[EMAIL PROTECTED]"
...>

OK. Here's the problem I'm having now.  I'm using <insetheader> to set the addresses..  apparently I can't use a bracket colon tag on it later in the code to fill in a value from a query.. but using an emailfile I also can't use the cfx_imsmail attributes to set the from tag..
