So, if I use their email address in the SMTPFROM, it will look like it came from the IP of their domain? That's not right is it? What would the IP address be if the SMTPFROM was a domain that was not on our server?

There's nothing wrong with doing it this way. There just might be a time where a company has a domain and a specific IP
on the server that you want to use for mail.

You could use that as the SMTPFROM but you don't need to use that in the header_to.
