I always like to configure servers with better specs than what I think I need so that 
it will handle additional load (if I forgot to factor in something or if I want to add 
something else down the line).  As for users - you need to allow only enough space to 
hold their mail files - so just multiple the total space allowed times the number of 
users and that should be a decent estimate.

We're planning on using something like this on all 3 servers:
ProLiant DL580 R02 Xeon MP 2.8GHz-2MB, 2xCPU 2GB MEM with 15krpm SCSII
disks. This server can be upgraded to 4xCPU and 16GB Mem

Overkill?

What about disk space reqs and bandwidth reqs for this number of users -
is there any good formulas to find the numbers?
