Failto is the address that you want the POST Server to send delivery failure notifications to...so, it can be anything you want.  SMTPFrom is what the server uses in the MAIL FROM SMTP protocol and can be a bounce address or most any other email address.
 
As for the POST Server - you don't need to check off any of the template if you don't need them.  The ReportPostStatus template (notifications checkboxes) can be enabled for success/temp fail/perm fail if you want to track those.  The postfail/postwarn templates allow you to use a custom message instead of the iMS built-in nottification emails.
