We also use jumpstart in our network.

Our jumpstart server is part of any subnet via vlan interfaces.

I would advice you to make sure, the nfs server is in the same subnet as the 
install client.

Make sure no firewall is in between.

Also give us some more info about your ip addresses & subnet ranges of the 
jumpstart server.

Please also post you nfs share configuration.

I'm using zfs for our jumpstart server.

We always share via:

zfs set sharenfs=ro,anon=0 <pool>/<FS>

Please also show us some output off snoop, make sure you only filter traffic 
from server to client

When you see: System identification complete , this mean (I tought) the 
sysidcfg has been mounted, is this an unattended install?

Is this on x86 or on sparc ?? If x86 can you show me your menu.lst 
configuration? I don't have sparc jumpstart experience.
