1. Is their a performance difference between XAA and EXA AccelMethods?

EXA is known to perform better with Compiz enabled, but worse 2d than
old XAA.
I think EXA is more reliable on multi-tasking.
UXA (the newer) is still unstable. Don't try it, random crashes and
whatsoever.

Is their a performance difference between the "intel" and the "i810"
driver?

i810 is the old driver branch, intel (i915/1965) replaced it

Don't need to compile all stuff, just add these repositories:
deb http://ppa.launchpad.net/intel-gfx-testing/ppa/ubuntu intrepid
main
deb-src http://ppa.launchpad.net/intel-gfx-testing/ppa/ubuntu intrepid
main
They contain stable backports (deb) of latest drivers ;)
I'd recommend to install 2.5.1 release.

Well, it's OpenGL related not about Ubuntu :p however Intel X series
only has hardware TnL (except X3000).
