Most sensors use standard electrical interfaces such as I2C, SPI, UART or
analog, all of which are supported by the IOIO. If you pick one or more
sensors that you like for your application and send out their datasheets, I
can help you verify that they are compatible and hint you on what it would
take to talk to them.
