It's as fast as pulling out a point and shoot camera, turning it on, and taking 
a picture. Maybe faster than my Panasonic lumix, even.

Press and hold home, "note idea for a movie, nuns with guns" and the note is 
created. If you have a headset, you don't even have to touch the phone.
