There is nothing that is going to work like that for the iPad. However, IMAP 
works A LOT like that.

iOs will allow you to cache some number of emails per folder, up to 200 I 
think. It is not that great a solution though because it really expects to be 
online, so when you reply, it complains. When you reply again, it 
complains--maybe twice. iOS is simply not designed to be offline when you're 
doing offline tasks.

That said, you might see if Sparrow has some sort of option for storing mail 
for offline access, it could, I suppose.

And if your friend is in the US and is not living in a rural area, open wifi (o 
at least "open" wifi) is very common. Even when I was driving through Del Norte 
Colorado, which has a population of about 2000 and is hundreds of miles from 
anything one might call a city, I had several options for free wifi.
