You cannot restrict the search to subject lines any more (or From, to, etc) That said, I can say that the change is not bothering me because I changed the IMAP software on the mailserver from courier to dovecot and dovecot is sooooo fast that searching a half a million emails is blazing. That's not a solution that is going to translate to too many other people though. For an example of the speed, I typed in the word "assertion" to the search.
