I'd suggest getting one of the newer models (not a 5S or 6). It sounds like you would benefit from the "Hey Siri" feature, which on older models requires the phone to be plugged in. On the 6S and newer, the phone doesn't have to be plugged in for "Hey Siri" to work.

As for 3D Touch, I find it useful, especially in iOS 10, but it is not essential. I haven't had a need to use it with VoiceOver, but you might find this article helpful:
