I believe Jobs has a special phone with vga output...so the only way I to do would be to use some recording software on your mac and record your iPhone Simulator. Most recording software allows you to specify an area of a the screen of even an application window (which is essentially what the iPhone simulator is) to record.
I use iShowU to record video myself but there are plenty of other solutions out there. M.
