## What is the purpose of the change
Bump Flink version to 1.15.1
## Brief change log
- Changed the Flink version from 1.15.0 to 1.15.1 in relevant project files
- Removed redundant `<flink.shaded.version>15.0</flink.shaded.version>` from
main `pom.xml` file
