[~bravikov] Thanks for reviving this. The sink failing when Kafka rejects a 
record is by design, but the same request do keep coming back: FLINK-38226 and 
FLINK-33479 for Kafka, FLINK-32028 for Elasticsearch, FLINK-40699 for the HTTP 
sink. I've raised this to Major and changed it to a New Feature, since I think 
we should solve it once for all sinks. It does need contributors who want to 
make this work.

With EXACTLY_ONCE a failed send puts the producer in an abortable error state, 
so one record can't be dropped after sending without aborting the whole 
transaction. That rules out a plain failOnError flag. The same callback also 
receives timeouts and leader changes, where dropping means data loss, so the 
default must stay FAIL and the user has to name the errors to drop.

For the client-side RecordTooLargeException you can already return null from 
KafkaRecordSerializationSchema#serialize (FLINK-29480) after checking the size 
like the producer does. Broker-side rejections are not covered by that.

This changes the Sink API, so it requires a FLIP, and it should align with the 
error handling discussion on the Dev mailing list 
(https://lists.apache.org/thread/sk3lzsqq66wbtbrb5l1fk2k3mg5sb5m3). At my 
employer we've added DLQ support for sources for SQL and Table API and we're 
considering contributing this back. Sinks are what we're looking at next. The 
hook that sinks need sits in the Sink API, so the DataStream API would get it 
as well, but that part needs someone from the community to drive it. Do you 
want to work on that?
