The latest Flink getting-started docs combine Iceberg 1.11.0 with Flink 2.3 after #17936, referencing `iceberg-flink-runtime-2.3-1.11.0.jar`, which is not available on Maven Central. Iceberg 1.11.0 publishes Flink runtimes for 1.20, 2.0, and 2.1. Restore the shared site parameters to Flink 2.1 so the examples reference a published runtime. These parameters also apply to nightly and other versioned pages.
