Thanks @mxm for the review and for the Dynamic Iceberg Sink itself! It’s the only working open-source solution I could find for multi-table ingestion within a single job. I packaged it into a container that can be configured via a Kafka Connect-like config https://github.com/kinolaev/iceberg-flink-kafka. It was recently deployed to production, and aside from this one, only one other issue has surfaced (#18509). I'd appreciate it if you could take a look at that one as well when you get a chance.
