Please take a text document in Writer and look, what the character table of the "Insert Special Character" dialog shows, when you select font "OpenSymbol". Please try whether a simple editor can select font "OpenSymbol". My guess is, that the font is not properly registered in Windows. You can try to delete the font OpenSymbol in Windows and reinstall it. Only to be sure, look whether a replacement is entered in Tools > Options > OpenOffice > Fonts.
