Description:
Implement logic to rewrite selected manifest files by processing each manifest
based on its type (data or delete) and with help of iceberg's
RewriteTablePathUtil do path change from sourcePrefix to targetPrefix and write
rewritten manifests to a staging location.
The copy plan should also be updated accordingly with the rewritten files.
