Description:
Implement logic to rewrite selected manifest files of the table by processing
each manifest based on its type (data or delete) and with help of iceberg's
RewriteTablePathUtil do path change from sourcePrefix to targetPrefix and write
rewritten manifests to a staging location.
We should also update copy plan with *staging -> final path mappings* for each
manifest file rewritten.
