How is the formatting of your plain text done? Are the columns made up using spaces? Then you need a monosized font such as Courier. If tabs were used, then it's more difficult since iText/PDF doesn't have the concept of tabs... In that case, you should indeed parse the tables first and use tables. But that's not that easy.
