How is the formatting of your plain text done?
Are the columns made up using spaces? Then you need a monosized font
such as Courier. If tabs were used, then it's more difficult since
iText/PDF doesn't have the concept of tabs...
In that case, you should indeed parse the tables first and use tables.
But that's not that easy. All depends on the formatting of your original
text...
