Steps to do:

- create the pdf with PdfWriter and save it (let's call it first)
- read the existing pdf (let's call it second) and remove the signature
field, unless you want to keep it with a big red, invalid cross
- read the first pdf
- concatenate the two pdfs with PdfCopyFields
