Have you tried running the book example?
Does it work? (It does for me.)

In your jar, do you see AcroFields$Item.class.
If you do, what is the problem?

I fear you are trying to run before leaning to walk.
Forget about your assignment. Try the book examples first.
Read about forms. Inspect the PDF that gives you troubles.
Read the PDF in a text editor. Can you see the object you
are trying to alter using iText???
