Because there might be a chance I could do this with pipeline (take  
some data -> put it into a PDF as a fake signature -> extract the  
data -> get the original PDF) with itext only.

The fact that the data 'hidden' in the signature blob actually IS a  
signature (and legally binding by the way) is not relevant.
