Did you try the plug-ins folder? We have a custom version of eclipse at work and I had to change it within the plug-in's folder but I'm not sure if that's standard or not.
If that's not it could you just search the directory tree and find it that way? You might also check the config files for eclipse like the .classpath folder it generates and see what it points to.
