Actually, more than likely, the EPS will be ignored by the converter since the only way to process it properly is with a Postscript interpreter. This is made even more complex by the fact that the most common use for EPS in Word is _NOT_ as a graphic BUT as an instruction set for Acrobat Distiller via something called "PDFMarks". And if you are expecting the EPS to turn into a field - that's EXACTLY what it is using.
Again, you need to go back to ASPOSE - this isn't an iText issue. EPS is a vector format, so it will be stored as a form XObject. It could be very difficult to find the position of that XObject because there are no examples available that show how to do this. For instance: if there's more than one form XObject on a page, how are you going to determine which XObject used to be the EPS image? There's no real answer to that question.
