The phrasing of the question is very strange.
You shouldn't ask "does product X support Adobe Acrobat X?"
Adobe Acrobat X can render and produce PDF documents with different
version numbers.
If you read chapter 13 of "iText in Action", you can see an overview of
the versions
going from PDF 1.0 to PDF 1.7. PDF 1.7 was used as the basis for
ISO-32000-1.
As you can read in the book, new features were added after ISO-32000-1.
They are organized as "extensions". iText supports most of the functionality
described in ISO-32000-1 and some of the extensions created by Adobe
(for instance Rich Media annotations).
The next version of PDF will be PDF 2.0, defined in ISO-32000-2.
The iText developers already have the draft of this ISO, and some new
functionality
(e.g. geospatial features) are already under development.
In other words: iText is following the standards very closely.
Moreover iText is very generic, therefore you can also extend iText
yourself.
For instance by creating objects that support geospatial features (which is
what we're currently doing).
Long story short: if you insist on phrasing your question as
"Does iText support Adobe Acrobat X?" a commercial person would answer
"yes",
but I'm only a technical person, so I hope you'll forgive me when I say:
"Please rephrase your question so that a technical person can understand
it."
