Yes with the maven exec plugin
mvn exec:java -Dexec.mainClass="com.foo.bar.Main"
and replace the com.foo.bar.Main with the class you'd like to run.

To get the snapshot, you can checkout |svn co
https://itext.svn.sourceforge.net/svnroot/itext/trunk/itext|

we're in the process of setting up a repository that contains the
snapshots too, but we're not yet finished with it.
Or should I just edit the pom file?
You can edit the pom file, set the com.itextpdf:itextpdf:jar
dependency to 5.0.6
this will also include the stuff that will be in the itext-xtra.jar
next release (the RichMedia stuff) and, I think, then you can remove
the reference in the pom to xtra, I believe it should not affect the
book examples.
I don't see the itext-xtra.jar file either?
The xtra jar contains the RichMediaAnnotations, we took those out of
the core since 5.0.7-SNAPSHOT. And also contains code for geospatial
PDF (from the future PDF spec 2.0)
