For this you need to download ISO-32000-1 (the PDF specification).
If you go to the Adobe.com site, you can find a version that you can 
download for free.
The URL tends to change once in a while, but using Google you should be 
able to find it.

In this spec, you'll find plenty of tables explaining the different 
entries in a field / widget annotation dictionary.
The font is one of the entries in the widget annotation dictionary.
It will refer to a font dictionary; this dictionary is also explained in 
ISO-32000-1.

Once you've worked yourself through the specs, you can use iText to 
retrieve all the necessary information from your PDF.
